Operation of the Potato Booth at the New York State Fair

The New York State Department of Agriculture and Markets is seeking applications for the operation of the Potato Booth at the 2026 Great New York State Fair, which will run from August 26, 2026, through September 7, 2026. This booth, a long-standing tradition since 1841, is famous for its one dollar baked potato and is located in the Horticulture Building. In 2025, over 70,000 people were served during the 13 days of the fair. Applications will be scored based on the proposed booth concept, rendering and description of booth concept, references, whether the business is New York-based, years of experience at the NYS Fair, minority/women-owned or service-disabled veteran-owned business status, and the staffing and service plan. In the event of a tie score, the application that is submitted first will be awarded the contract. The selected vendor will be required to execute a contract with the Department, with sample contracts and standard clauses provided.
