Beaufort County is seeking a contractor to provide comprehensive food services for the Beaufort County Detention Center. This includes furnishing all labor, food, beverages, materials, supplies, and chemicals necessary for food preparation and service to inmates and staff. Services must comply with South Carolina Minimum Standards for Local Detention Facilities and meet all state requirements, including those from the Department of Health, Department of Agriculture, and State Fire Marshal's Office. The contractor will be responsible for preparing and serving nutritious, wholesome, and palatable meals, including special diets, based on a twenty-eight (28) day cycle menu. Meals must meet or exceed all local, county, state, and federal laws, as well as ACA and NCCHC standards. The contractor will manage both civilian and inmate kitchen staff, and will be responsible for sanitizing food service equipment. The scope of work also includes providing meals for staff and potentially for additional sites in the future. The contractor must adhere to strict quality standards for food products, menu planning, and portion control, with no pork or pork by-products to be used in inmate meals. Sample trays must be retained for 72 hours, and all meals must be prepared fresh daily and served between approximately 5:00 a.m. and 6:00 p.m.
