The County of Lancaster, Pennsylvania is seeking bids for a contractor to provide complete foodservice for the Lancaster County Prison, operating every day of the year. This includes meal preparation, supervision, and training of inmate trustees. Vendors must demonstrate experience in food preparation and management within an institutional environment, specifically for secure facilities housing incarcerated individuals. A manager must be available on-site during all hours of operation, supported by an appropriate compliment of dietary supervisors. The scope of work involves furnishing all labor, materials, and supplies necessary for foodservice, including inmate serving trays, cleaningsupplies, and equipment not provided by the County. The contractor will manage the foodservice program in compliance with all federal, state, and local laws, ensuring nutritionally adequate meals that meet industry standards. The service requires a minimum of 320 staff hours per week, plus inmate trustee assistance. Meals must adhere to a 4-week menu cycle, with specific provisions for holidays and special diets (non-pork menu is standard).
